Nourishing and gently warming, this slow cooker vegetable soup is the perfect winter warmer.

If making for kids, you can leave out the chilli and just top with chilli flakes for the adult portion.

750g sweet potatoes, cut into large chunks

1.25cm (½ in) fresh root ginger, peeled and finely grated

onion, chopped

garlic cloves, crushed

2 tsp.

ground cumin

1 tsp.

ground coriander

red chilli, deseeded (if desired) and finely chopped

400 ml

(14 fl oz) tin coconut milk

500 ml

(17 fl 0z) vegetable stock

Finely grated zest and juice of 1 lime

75g crème fraiche

Put all the ingredients except the lime juice and crème fraiche into the pan of a slow cooker.
Cover with the lid and cook on high for 3hr until the sweet potatoes are tender. Blend, in batches if needed, until completely smooth.
Season to taste with salt, pepper and lime juice. Serve with the crème fraiche swirled through.

Get ahead:Make to the end of step 2, then transfer to a sealable container and cool to room temperature. Cover and chill for up to 3 days. Reheated portions on the hob until piping hot.
